This recipe describes a step-by-step recipe for making a classic yeast dough, which is suitable for baking any bakery products.

Necessary ingredients (for 20-25 products):

  • flour 4 tbsp. l with a slide (for dough) and 1 kg (for dough);
  • cow milk 1 2 liters, heated to a temperature of 40-45 degrees;
  • active dry yeast;
  • 5 tbsp. l Sahara;
  • eggs - 4 pieces;
  • pack of butter;
  • salt is a big pinch.

How to cook:

  1. Mix milk and 2 tablespoons of sugar. Add flour (4 tbsp. Tablespoons) and dry yeast to the sweet mixture. Their number depends on the manufacturer (before use, carefully read the instructions on the packaging).
  2. We clean it in a warm place, after covering it with a clean towel to avoid drying.
  3. Opara came up when she foamed and stood up.
  4. Beat three eggs with the remaining sugar.
  5. We add eggs, beaten with sugar, melted and slightly cooled butter, sifted flour and salt to taste the dough that has come up.

Quick fried pastry dough

Yeast dough can be prepared quickly enough. Its only drawback over the classic one is that the products are less airy. But for fried pies, this is the perfect dough.


  • flour - 2 full faceted glasses;
  • warm cow's milk - 400 ml;
  • vegetable oil - 1 3 glasses;
  • dry active yeast;
  • chicken egg;
  • sugar;
  • salt.

How to cook:

  1. In warm milk (temperature should be 40-45 degrees), dry yeast is dissolved. To determine their exact quantity, use the instructions on the packaging.
  2. Add milk to the egg, sugar (3-4 tablespoons), a pinch of salt. We mix everything.
  3. Mix sifted wheat flour with milk and vegetable oil. Stir until smooth.
  4. Cover with a clean towel. Since the activity of the yeast will be highest at 37 and 38 degrees, remove the dough in a warm place. We are waiting for it to come.
  5. In order for the pies to be more magnificent, you can precipitate the dough and let it come up a second time. Although with a lack of time, it will be enough once.
  6. We make pies. After their manufacture, let them stand for about 5 minutes.
  7. Bake at 180-200 degrees or fry in warmed vegetable oil.

  5. Such dough is baked at a temperature of 180 degrees.

To get a beautiful color of the finished product, do not forget to grease it with beaten egg yolk before setting it in the oven.


One of the options for yeast dough is puff yeast dough. Its preparation requires patience and a sufficient amount of time.

Required Products:

  • flour - 2 full glasses;
  • warm cow's milk - 1 cup;
  • oil (if desired, replace with margarine);
  • dry yeast - 1 pack;
  • sugar - 3 tablespoons;
  • salt to taste.

Cooking Algorithm:

  1. Pre-roll the oil between two layers of cling film into a thin layer. We send it to the refrigerator.
  2. The warmed milk is mixed with dried yeast according to the instructions for use.
  3. Add salt and sugar.
  4. Mix milk and flour. Mash to a homogeneous consistency. The dough should turn out soft, not stick to your hands.

  7. From chilled dough we make two thin layers.
  8. Between them we put previously rolled butter or margarine.
  9. The resulting "sandwich" roll out.
  10. A layer consisting of two layers of dough and one oil is folded in three. Again, put it in the refrigerator. Cool for half an hour.
  11. Then we get it and roll it out. We perform this procedure 4-5 times. The more times the layers are rolled, the more magnificent is the finished dough.
